Vanilla buns

Today I made some vanilla buns and followed Ingrid's vanilla buns recipe as that is my favourite :)


Ingredients:

Dough
150 g butter
5 cups of milk
50 g fresh yeast
1/2 tsp salt
1 cup of sugar
1 teaspoon cardamom
13 cups of flour, 12 + 1 cup

Filling
100 g butter
6 tsp of sugar
3 tsp vanilla powder

Brushing
1 egg
2 tsp pearl sugar

How to do it
First melt the butter in a saucepan, add milk and heat to 37 °. Place the yeast in a bowl and then pour some of the liquid over it so that it dissolves. Add the remaining liquid, salt, sugar and cardamom. Add the flour and work it to a smooth dough. Let rise underneath a tea towel for about 40 minutes.

After the dough has risen, roll and stretch half of the dough on a floured surface into approximately a 40 x 25-cm rectangle. Do the same with the other half. Mix the filling and spread it on each of the sheets of dough. Form into two rolls and then cut the rolls to make about 12-15 buns out of each roll. Place the buns in paper baking cups on a tray. Then cover with tea towel and let buns rise for about 30 minutes. Preheat the oven to 250 °.

Beat the egg and brush it lightly on the buns. Sprinkle with pearl sugar and bake the buns in the middle of the oven for 8-10 mins. Let cool for a while before you serve them. Enjoy!

Chewy cranberry cookies

Yesterday I made the most gorgeous cranberry cookies. I never make cookies normally but I found this recipe in the blog Söta Saker and I just had to try it out :)


100 g butter
1 tablespoon of honey
1 / 2 cup of water
2 cups of oat flakes
2 cups of flour
1 cup of pumpkin seeds
1 cup of sesame seeds
1 cup of dried cranberries
2 cups of sugar
2 teaspoons of baking powder
1 pinch of salt

Melt together honey, water and butter over medium heat in a saucepan and let it cool down. Mix all the dry ingredients in a bowl and then stir the mix into the butter mixture. Keep stirring until you have a sticky mixture and then shape into small balls. Put them on a baking tray with parchment paper. Bake in the oven at 175 degrees for fifteen minutes.

Homemade muesli

Last week I finally decided to make my own muesli after thinking about it for quite some time. I browsed through various recipes on the Internet but didn't find any that I liked 100%. Therefore I decided to create my own recipe that was based on what I had at home. I must say that I'm very happy with the result and it's so much nicer than any other muesli you buy in the supermarket. I let my darling taste it last Saturday when I made him breakfast in bed and he thought it was nice but he asked for more nuts, especially hazelnuts. I will have to take that into consideration the next time I'm making a load ;)



Katja's homemade muesli


7 cups of oatmeal
1 cup of linseed
1 cup of sunflower seeds
1 cup of pumpkin seeds
1 cup of coconut flakes
1 cup of pecan nuts
1 cup of cashew nuts
1 cup of almonds
dried blueberries
raisins
dried apricots
1 teaspoon of salt
1 cup of water
1 cup of honey
1/2 cup of cooking oil

Heat the oven to 200 degrees

First you mix all the dry ingredients in a bowl except for the blueberries, apricots and the raisins. Then you add salt, water, honey and cooking oil and stir. After that you put your mix in a bigger cooking dish or a baking tray and put it in the oven for about 30 minutes. Make sure you stir often to avoid it getting burnt.
